Recipes for Michael’s awesome Lemon Chicken & Lemon Chili Pork
Pollo con marmellata di limoni
(Chicken with Lemon Marmellata)
- 1 whole chicken
- 3 lemons (cut into 8 wedges each)
- 6 spring onions – chopped
- 4 toes garlic – chopped
- 1/2 stick butter (cut into 2 equal pieces and softened)
- 1/2 c mixed fresh herbs (thyme, rosemary, parsley or cilantro)
- 1 tsp crushed red pepper or chili powder
- 1/8 tsp of nutmeg
- Salt & pepper to taste

Preheat oven to 425 degrees.
Rinse then pat chicken dry with paper towels.
Mix thoroughly in large bowl – lemon wedges, onions, garlic, herbs, red pepper, nutmeg, salt & pepper and 1 piece of butter.
Stuff chicken with mixture.
Smear last piece of butter over skin of the chicken then sprinkle with salt & pepper.
Place chicken breast side down on a rack with pan underneath (preferred) or in cast iron skillet or roasting pan.
Place rack & pan in preheated oven and roast until skin get slightly brown, and then turn bird breast side up and roast until breast side skin is nicely browned.
Take bird out of oven and cover with Marmellata then return to oven, reduce temp to 375 f. and cook for another 30 minutes or until 165 f. internal temp of bird. Take out and let rest for 10 minutes.
Combine pan juices with a liberal spoonful of Marmellata for a divine au jus.
Pork con peperoncino e limone marmellata
(Pork loin with chili and lemon marmellata)
- Pork loin – 2 lbs
- 1/8 c olive oil
- 1 small onion minced
- 3 toes garlic minced
- 1 tbl chili powder
- 1/4 tsp ground cumin
- 1/8 tsp ground cloves
- Salt & pepper to taste

Heat olive oil in skillet.
Preheat oven to 400 degrees. Rub pork loin with salt & pepper and brown on all sides over med-hi heat in an oven ready skillet with olive oil. Remove skillet from heat and set aside to cool.
Mix chili powder, cumin and cloves together and rub on cooled down pork.
Rub pork with garlic and onion and cover with Marmellata.
Return to oven and cook for 8 to 10 mins. Remove from oven, spoon excess Marmellata mixture from skillet back over pork loin and let stand for 5 mins.
