Is Copi the New Salmon?!

Hot off the press! Food & Wine Magazine just announced Copi might be the new salmon! 

“Copi, previously known as Carp, was imported to the United States from Asia in the 1970s. It was used as a method to control nuisance algal blooms in wastewater treatment plants and aquaculture ponds.” Now rebranded as Copi, this fish is tasty and healthy. 

Look for the fish to appear in fish markets and restaurants soon, with Gaijin blazing the trail. Copi will be a new addition to their menu. Unfortunately, no restaurants in Chicago currently serve Copi, but we are anticipating it to be a popular menu addition soon.
